NVQ 2 Level 2 Diploma in Professional Cookery & NVQ Level 2 Diploma in Food Production & Cooking

At this level you can specialise in a chef or hospitality programme. These courses are designed for students who have completed an NVQ programme at Level 1 and wish to proceed to this intermediate stage. Students work within our professional kitchens and City View restaurant, cooking/serving up to 45 customers daily. During the course you will cover a variety of food and food and beverage units. As part of their course students are required to attend and complete work experience, this is facilitated by the college.

On completion of this programme you may progress to a higher level programme or commence a career in industry.

Course Content

Topics Covered

Working within our professional and realistic working environment; which includes, Larder, Pastry and Production Kitchens, you will cover a variety of food units & front of house units; these may include:

  • Preparing & cooking fish dishes
  • Hot & cold desserts
  • Meat & poultry dishes
  • Pastry products
  • Preparing & cooking fresh soups
  • Maintaining safety
  • Fresh vegetable dishes
  • Professional knife handling
  • Convert a room for dining
  • Create a positive impression

Practicals
Level 2 Hospitality & Catering students will have practical lessons three or four mornings a week.

Exams
NVQ programmes are assessment based qualifications, students are continually assessed across the academic year; both in practical & theory. In addition students will work towards achieving GCSE in maths & English.

 

Entry Requirements

This course is usually a progression for students who have achieved an NVQ in Food Preparation and Cooking at Level 1.

Minimum Level 1 English
Minimum Level 1 Maths
